Also note that once Audacity is running, you cannot open further files from a file manager or the command-line; you will see the error you mention:

From your description, the issue seems to be that Audacity cannot write to the temporary directory, which was one of Steve's suggestions. Personally I find audacity's behavior on this issue REALLY annoying. This is not Apple Support.
In any version of iTunes I have ever used, the newly converted version appears underneath in the Library, so you should have two identically named files. You can right-click over each > Get Info to see where the file is and the format it is in.
