You can use HOME then SHIFT + K to select all of a track without the selection extending to the end point of longer tracks. Given you have a mono cable, I wouldn't rule out it being something that updated drivers might change, if you did not have correct drivers. Mono cable into a single stereo line-in is not uncommon, but it's somewhat unusual to see the half volume problem in that case.

If you want to use your audio in other programs, File > Export and choose the type of file (like WAV). Don't use File > Save Project (which saves a file only Audacity can use, as the message says).
