If you are talking about exporting MP3 files, choose "MP3 Files" when you export, then click the "Options..." button to adjust the MP3 export bit rate.
If you are talking about some other format please tell us the exact file format and export specifications you want.

There is no obvious way to tell which channel is which, given the "random numbering" scheme of AU files. However from tests I have done getting file creation times in milliseconds from Windows PowerShell, Audacity still does write the left channel before the right. In that case Windows run...

I am still not clear, if you are playing a backing track in Audacity and that is what sounds poor, what the source of that track is. Have you recorded it, so the problem is the recording quality? Are you recording this song from the TV? Or is it a song you imported into Audacity that should sound OK...
