Sorry for the problem. It is the same Unicode problem even if your file did not have accented characters. Maybe you can find out from the Mac nightly builds site at what time point the log went wrong on Mac. For what it's worth, the May 19 build does not crash, and the May 20 build does (for me). For any import that succeeded the log looked correct. I haven't (so far) got anything past May 20 to import...

The "audacity.exe" that you installed won't be of any use to you, so yes you need to delete that "audacity.exe" (but not anything else) from your installation folder then put the unzipped "audacity.exe" instead into the installation folder.

Were you recording into a saved project? If so, the audio data is in the _data folder for the project.
Either way, have you restarted Audacity? If you are lucky you will be presented with the Automatic Crash Recovery dialogue . Does that dialogue appear?
