Further to Koz's suggestion, you could perhaps you record them overnight. Don't go over about 13.5 hours per track at 44100 Hz, or you won't be able to reopen them as Audacity projects. Have you deleted Audacity and reinstalled it? Control Panel > Add Remove Programs. When you reinstall Audacity it should arrive with a welcoming screen and completely absent any customization you had (take customizing notes).
