I am having a hard time trying to figure out how to use the software via the online help. I have always had better luck using hard documentation. Please post the content from Help > Audio Device Info... so we can see what input choices you have.
If you want to record two channels, set Audacity to "stereo" in the fourth box of Device Toolbar.
