There is Time Tracks although you have to draw the curve first. It sounds like you are asking for a real-time Transcription Toolbar ? You don't. That is not noise, like steady hum or hiss which can usually be reduced.

No. The steps at http://wiki.audacityteam.org/wiki/Building_On_Mac actually produce a universal binary. The Xcode 3.x SDK is currently required, even if you make a native Intel build.
