The format options are not currently displayed unless you open the Options dialog (which necessitates two clicks - one to open it and one to close it). Not really, the frequencies in the drum rattle are too similar to those in the choir. I would do without the stereo because the right channel has more of the rattle. In a word, no, unless the instruments are on their own in a separate track or channel.
Post a short audio sample of choir and instruments together if you want us to confirm there is nothing you can do.

I don't understand if you mean that you cannot yet import DSF files. If you mean that, try installing FFmpeg which is supposed to support DSD, then import the file into Audacity.
