In Audacity 1.2.x there was no "options" button in the export dialog. Those options were set in the Preferences, I'm not sure in which section. Yes the files are kept while the project is still open in order to be able to undo the delete action.

First try upgrading to the latest 1.3.13 version and see if that solves the problem. If the original files are in an uncompressed format such as WAV you can use the faster method when importing, but be careful, if the original files are removed you'll get empty tracks in the project... Which exact version for 1.3? The latest is 1.3.13. The old 1.2.6 runs fine on xp, but on Vista you should be running 1.3.x. Anyway the problem might be related to how you import the files... Often the problem is also with the "recording studio". Echo's can kill the show. Mic placement can also have some influence. So does the way you speak/sing. Even the way you breathe can change the way your voice sounds. And of course, like Koz said, not everyone has a radio-like deep sounding voice ...

If you can hear a perfect sound from the headphones when you connect them to the output of the piano, then getting the UCA-202 or a similar device will probably solve your problem. Does the device have any memory card you can take out? If there's no way you can access the files on the recorder then you probably have to connect the headphones output of the device to the line-in of your sound card (blue socket). Then you should select the line-in as the recording device in Audac...
