It shouldn't be any difference in view between recording and playback. I'm not very sure if I understand what you mean. You might also want to consider FLAC as an alternative to WAV.

FLAC is a lossless audio codec. Files usually have half the size of a WAV (with no loss in quality).

When the recording level slider is grayed out it means audacity wasn't able to takeover the control of your system's mixer controls. Which is pretty common in most linux systems. In this case you have to use your system's mixer control panel (e.g. alsamixer) to adjust the volume.
