OK, i just tried recording with Soundbooth and Garage Band, and both are doing the same thing. It MUST be iTunes. still... any advice would be helpful.

When you import into iTunes, does iTunes automatically convert it to MP3, or does it keep it as AIF? Do you have any default equalizer settings in iTunes that could be affecting playback? ...

I wouldn't bother with MP3 - I use Apple's AAC, I export WAVs and get iTunes to do the WAV to AAC conversion.
