OK, i just tried recording with Soundbooth and Garage Band, and both are doing the same thing. It MUST be iTunes. still... any advice would be helpful.

Is there a very clear, specific purpose in your using AIFF? There is no damage by doing that, but I've never found it necessary to deviate from WAV files -- even on a Mac. OK, we seem to have established that the AIF files exported from Audacity are fine - they sound good in Toast. When you import into iTunes, does iTunes automatically convert it to MP3, or does it keep it as AIF? Do you have any default equalizer settings in iTunes that could be affecting playback? ...

I wouldn't bother with MP3 - I use Apple's AAC, I export WAVs and get iTunes to do the WAV to AAC conversion. I'm using Audacity 1.2.5 (OS 10.5.8) to digitize my record collection at 44100 Hz, 16 bit. I have the files so that the levels are just below clipping and they sound great in Audacity.
