Multi-core support is something that the Audacity developer's want to add, but it's a big, complex job. The extensive code refactoring that has been done for Audacity 2.3.3 (not yet released) is likely to help smooth the way for multi-core support.

What is the exact command that you are giving, and what exactly happens?

Did this work with your old version?
Did you connect the device before you launched Audacity? (you need to).

Usually it is 192kHz. So your signal is quantized to periods of just over 5.2 microseconds. I updated to Mac OS Catalina (official release) I also updated Audacity to 2.3.2
It is not possible to select the microphone (even on this public Catalina release)
