Collapsing the tracks shrinks them to their minimum size. The only way to view more tracks than that at the same time would be to use a bigger / higher resolution display.

The error message in the terminal indicates that Audacity (actually "portaudio", which Audacity uses) is unable to recognise any AudioUnit devices.

When you launched Audacity via the terminal, were you asked to grant permission for the application to access audio devices?
