I've not tried Audacity 2.3.3 yet I've tried it now. When I first tried launching Audacity, I got a message saying that Audacity could not be opened because the author could not be verified. To fix that, I used "control + click" on the icon in the dock, and then selected "open"....

Setting the environment variable like this means it will only persist for the shell you are currently in. This variable should be set permanently via advanced system settings ( run SystemPropertiesAdvanced.exe). Under the advanced tab select the environment variables button and create new variables...

Audacity doesn't have a "blue slider on the level meter", but I guess that you just mean that you are not seeing a level on the recording meter.

Can I compare the two channels in Audacity? The "Analyze" option in the "Vocal Reduction and Isolation" effect gives a measurement of the "correlation" (similarity) of the two channels. See: https://manual.audacityteam.org/man/vocal_reduction_and_isolation.html#analysis

A stereo track has two audio channels.
A mono track has only one.

If that's not what you meant, then you will need to be clearer in your question.
