You can add new tracks: "Tracks menu > Add New > ..."
You can join two mono tracks to create a 2 channel (stereo) track: https://manual.audacityteam.org/man/spl ... racks.html

For a stereo track, you can execute a 'diff' command, by inverting one channel and then mixing the two channels. I don't know of any way to transpose that to a multi-track recording in a meaningful way. I don't think that any simple "algebraic" operation will give meaningful results.

the echo the waveform is flipped upside down OK. That's reasonable, though I agree that the terminology is problematic / misleading. There is a way that you can achieve that with the current version of Audacity - not as simple as just setting a negative slider value, but the same result: Duplicate ...

It's normal for both channels of a stereo track to look very similar. This track is stereo - I can hear the stereo.
