How about recording yourself twice (as mono tracks) and then pan them?
If you want them more similar than that, you could duplicate the recorded track, apply a small amount of "Change Pitch" effect to the copy, and then use the Time Shift tool so that they don't exactly align.

The next release of Audacity will (probably) include an effect that can normalize to a specified RMS.

Click on the track that you want to record to, and press "R" (or click the Record button).
Note that the "number of channels" selected in the "Device toolbar" should match the number of channels in the selected track.

Audacity does not have an effect called "Simple Amplifier". That may be a plug-in, but it's not part of any Audacity release.
