My version of Audacity came with the product - the cassette recorder from the supplier. That version is probably too old for Catalina. Uninstall it (drag the entire application to the recycle bin). Then get Audacity 2.3.3 via the links on the Audacity website: https://www.audacityteam.org/download/...

My choices are "default", "pulse" or "HDA Intel PCH: ALC3220 Analog (hw: 1,0)" Is there no "(hw: 0,0)" option? If you shut down all audio applications, then kill the KDE mixer, then run: pulseaudio -k and then start Audacity, do you get a "(hw: 0,0)"...

If you use Jack Audio System, you can route the signals to get both your mic and the voice of the other person. I've just tested this, but unfortunately Skype is too buggy and fails to work with either Jack or "pulseaudio-module-jack". It IS possible to record Skype with Audacity on Linux...

Your first image is not quite right. The orange region should be outside of the yellow region. If you have the choice, try video conferencing software that uses Opus (for example "Jitsi"). Opus format is exceptionally good at preserving audio quality at low bit rates.
