I've not tried GSnap on Catalina, but if it works at all you will need Audacity 2.3.3 (or 2.4.0 when it comes out) and the 64-bit version of GSnap.

That's normal on most Linux computers. Use the microphone level control in your Desktop audio mixer (look for a loudspeaker icon to get into the sound settings).

I'd guess that it's picking up noise from the laptop's built in microphone.
