Thanks.
The first had already been fixed in the development manual (it's too late to change the released manual).
The second is on the Audacity wiki rather than the manual.
I did however find a couple of others in the development manual which I have now fixed.

Check that you haven't inadvertently enabled the "Force export to mono" option in the MP3 settings.

Having listened to your sample clip, by far the biggest problem there is, as Koz commented in his first reply, clipping.
Reduce the signal level a little to avoid clipping will instantly make a huge improvement to the sound quality.

Should I try opening the top of the piano and dropping the mic inside? Yes. Try opening the top, try opening the bottom, try opening the top and bottom, try positioning the mic close to the sound board, try everything. Audacity 2.4.0 uses a more recent version of LAME.
