Probably as high as you can get it, though if it is played on a professional broadcast it will be reduced to whatever standard the broadcaster uses.

Audacity records whatever audio it receives. The only adjustments available during recording are the adjustment that can be made through the computer sound system - usually just recording level.

The current version of Audacity is 2.4.2. Updating is highly recommended as this is a bug fix release. https://www.audacityteam.org/download/mac/
