If you have multiple tracks in Audacity and you only want to select some of them, you can either select the track(s) that you want to export and use "Export selection as..." or, just delete the tracks that you don't want before you export.

It may not be possible to record from multiple inputs of your Presonus Firebox with Audacity - it all depends on how the drivers work. Try selecting the Microsoft Sound Mapper output. If other Windows programs can play audio, the the Windows Sound mapper setting should work.

There's a drop down list to selct the default bit rate for mp3's.
