The easiest way to hear only the mic'd guitar would be to just take your headphones off so that you can hear the guitar amp. Other than that, you would need to use a mixing desk so that you can create a separate headphone mix that is different to what you are sending to the computer.

I rarely use Windows these days, but I used to use "CDex" as a reliable and convenient CD ripper. I think the current version of CDex may contain adverts, so if you want to avoid that, get the "portable" version.

Snap packages run in a "sandbox" environment. That may well be why it behaves differently from the deb version. Nonetheless none of the above is helping to remove the snapd version of Audacity. I'm not able to help with that as I don't use Snapd. Perhaps worth asking on the Ubuntu forums (...
