There is no demo mode for Audacity - it is free, fully functional Open Source software. It stops recording after 3 seconds, every time. I always prefer to mic up the cabs for electric guitars rather than DI, but if you must DI, put it through a modelling pre-amp first (example line 6 pod) - (the guitar effects for Audacity are still pretty basic). I'm guessing that you have got "Software Playthrough" selected in v.1.3.4 ("Edit->Preferences->Audio I/O") which is sure to cause noticeable latency. No idea how you've got 1.2.6 set up to avoid it, but I'd have a look there first and simply copy the settings to 1.3.4
