I think the XENYX 2442FX USB mixer is basically an analogue mixer with a (single) UCA202 interface, so you can just record the stereo mix. Check the manual to be sure.

I can understand you not wanting to make any huge financial (or learning curve) investment, but it may be worth trying a Behringer UCA202. They're cheap and I have one permanently connected to my turntable (via a phono pre-amp) and I'm very happy with the results. http://www.behringer.com/UCA202/ind...
