Whatever microphone configuration you have, it is still 2 channels that you are recording.
Audacity assumes that a 2 track recording is standard L/R stereo, however, once you have recorded the two channels, you can split the stereo track and process them in any way that you want.

Audacity does not need a huge amount of disk space for starting, but quickly uses a lot of space when you start to use it. It's quite easy to copy envelopes (but keep backups of everything because if it's quite easy to destroy an Audacity project with manual editing). Audacity has a lot more features than many other sound recorders, including being cross-platform and multi-track capable.
