The built in effects for equalisation and noise removal work fine in current versions of Audacity (when used correctly).
They are not VST effects.

Yes. Simply record one track, then press "stop". Click the "rewind" button and start recording again - a new track is created automatically.

I don't know much about redhat, but could you install Audacity 1.3.4 from the Fedora rpm ?
