Inexpensive phono pre-amps can produce surprisingly good results, and if using a budget turntable and cartridge it is probably not worth spending a lot more. I've not checked it out, but I think that Audacity may use 32bit internally. If I remember, I'll do some tests to check that later.

I am using the mike that came with our Compaq computer more than 5 years ago. It is on top of the computer and I stand about 3 feet away, so it's not really that close to the guitar. I would definitely recommend using a better microphone, and placing it a lot closer to the guitar - try about 20 cm ...

What can I expect for sustained recording at 192k/24? You can expect little noticeable difference to recording at 44.1/24 except for much larger files.
