I've been ripping my hair out trying to figure out why, even though I select stereo in the preferences window, Audacity is just recording the left channel twice. You can use "Silence Finder" or "Regular Interval Labels" from the Analyze menu

I presume this is the USB turntable - they are known to be very fussy about USB sockets and will often work perfectly plugged into one socket, but all sorts of problems with another.

I'm a bit confused here - you started off talking about recording from the mic/line jack on your laptop, but now we're onto an external USB sound card. So what's the problem, and which are you trying to record from, internal or external?

The Eq thing that koz mentioned is the main thing. For crackle, try recording some sweet wrappers being scrunched up. "Center Pan remover" removes sound that is panned dead centre.
