I don't know what you mean by "splitter".
It is not possible to convert audio to MIDI with Audacity.

See if it makes any difference if you connect the headset before launching Audacity.

Look in Preferences for an option to "scroll when playing". Sorry, I don't recall where the setting is in Audacity 2.2.1
(the current version is 2.4.2)

It's Audacity 2.1.1 That's a very old version. I think the best way to handle this problem will be to completely trash your current version, including the folder " ~/Library/Application Support/audacity/ ", and then do a fresh install of Audacity 2.4.2 . You may want to make backup copies...
