In the Device Toolbar, set "host" to "MME" and select the USB mic as the recording device (and your sound card as the playback device).

Pioneer's website says that's a controller for "rekordbox", so why do you need to use Audacity for recording?

Ignore blank space at the beginning

Enable that option.

Do you mean that it records a flat line - silence?

I think you will need to provide more information.
Describe in detail, step by step, how I can reproduce the problem.

Do your tracks have empty space before the audio starts?
There's an option in Preferences to select whether empty space before the track starts is included as silence, or ignored:
Ignore blank space at the beginning

Are you using "Export Multiple" based on "tracks"?
How many tracks in the project?
What are the start / end times of the tracks?
How much silence is there at the beginning of each exported file?
