For e-mailing a voice recording - Export from Audacity as MP3.
I presume that Mac's mail programs are not dissimilar to other computers and you can add attachments to the e-mail.

USB audio devices will commonly "take over" the audio system, so you will need to check what device is selected for recording and for playback in Audacity (Edit > Preferences > Audio I/O)

Check that the file you are exporting is 16 bit (and preferably 44100 Hz for best compatibility).

LAME is a bit different to other plug-ins (such as effects plug-ins).
If you put it in the main Audacity program folder instead of the plug-ins folder, it will probably be detected automatically. (seems to work with Audacity 1.3.x anyway).
