when people have to shut down sound servers before using Audacity, it's said that setting the conflicting application to use the ALSA default device (as well as Audacity) may let Audacity share the device via dmix. Can JACK be configured like that to solve the ("have to shut JACK first") ...

It should work fine with GVerb, but you may have to play around with the settings a bit.
My guess would be something like:
Room size ~ 150 m
Reverb time ~ 2.5 seconds
Damping ~ 0.5
Input bandwidth ~ 0.75
Dry signal at minimum. (-70dB)
Early Reflection and Tail Level, both ~ -12 dB

Use a phono/phono lead to connect the output of the UCA 202 to the input of the UCA 202. This is known as a loopback connection, and it will enable you to record the output of the UCA202 through the input of the UCA 202.

Audacity 1.3.6 orders plug-ins in categories, I think they should still be present, but their location will have changed.

I suspect that your client may also rquire this as CBR (constand bit-rate) so make sure the Constant radio button is selected.
