Audacity does not record WAV tracks. Audacity records Audacity Projects.
To get a WAV file you must Export from Audacity.

Audacity then creates a "Cleaned" directory off of the Podcasts sub-directory, which iTunes doesn't easily read. Why can't iTunes easily read it? I want to be able to just overwrite the original files. Drag and drop, or cut and paste. When prompted to overwrite, say "Yes for all".

What version of portaudio do you have installed? I think that it needs to be at least v.18 - you may also need the dev package of portaudio since you are compiling from source.
