"Conversion: Real time" set to "Fast Sinc / None"

And seriously, are you recording through an external USB device? USB is particularly prone to this sort of problem because access to the USB port is dependant on CPU availability. Guitar Rig 3 is said to be pretty good, but it costs over $300 US. It's probably not compatible with Audacity either.

If there have been absolutely no other changes, then moving the files back should restore the project.
