From the File menu, select "Export"
In the Export dialogue, just below the file browser there is a drop down list for selecting the type of file format (Uncompressed WAV / MP3 / OGG...)
Then click the big "Options" button, to specify the exact format / compression amount.

Check that the turntable is completely level (left/right and front/back)
Get a magnifying glass and inspect the stylus.
Check the manual - does your turntable have an anti-skate device? Is it in place and adjusted correctly?

You probably have other stuff running on your computer that is reducing the performance of Audacity. Disconnect from the internet and shut down all non-essential processes. Common culprits are Windows Update and anti-virus programs. Also, how much free disk space do you have? When was the last time ...
