As Trebor wrote, you need a DAW with support for virtual instruments.
I'd suggest that you try GarageBand.

You're probably trying to amplify too much. By default, the Apply button is greyed out if you try to amplify beyond 0 dB.

That's a popular feature request. Currently "Sound Activated Recording" in Audacity simply stops when the sound drops below the threshold level - there is no "post roll".

(Cmd + .) does not work on the “Magic Keyboard” for iMac, because you would have to press Shift to access the dot key. I replaced it with (Cmd + ; ) in the keyboard preferences > shortcut. Now it works. ( . and ; ) are on the same key. I've just tested, and "Cmd + ." works for me with an ...

On Linux and Windows it's "Ctrl + M"
