The most simple workaround is to switch off the Metadata dialogue in Preferences and to use another application for tagging. As I understand it, the issue is that if the metadata export dialogue is called before the audio format type is selected, then you have the result of people entering meta data...

Some on-board sound cards simply do not have this feature.

I think we will need to hear a sample to be able to diagnose the problem further. Can you upload a short sample (just a couple of seconds) of recorded crackly audio somewhere on the internet (in WAV format) and post a link so that we can download it and have a listen.

USB headphones are a completely separate audio device to the computer sound card. You probably have Audacity set to use the computer sound card as the play back device (hence the speakers work).
