The lame encoder allows Audacity to export audio in MP3 format. Once you have installed Lame, you can select MP3 as the export format.

Only if the piano and the vocal are recorded on different tracks, otherwise no.

You should upgrade to Audacity 1.3.7 - the noise reduction effect is much improved and works as an effective hiss remover.

You need to delete the Audacity preferences which should be located:
~/Library/Preferences/audacity Preferences

If you delete the entire "/audacity Preferences" then Audacity will be reset to day 1 and when you next start Audacity you will be asked (in English) to select the language.

FireWire connections not only trade data back and forth, but housekeeping as well. That's why it's highly recommended for video capture and production of all types. If Audacity is receiving stereo data and it is recording on 2 channels, then it will (must) record in stereo. There is something that you are not telling us.

There are 4 and 8 input USB devices available (try Google) but Firewire is far more popular as dropouts can be a major headache with USB audio devices, and the more inputs/outputs the worse it gets.
