The usual cause of that is that Audacity is in "Pause" mode rather than "Stopped". Many of the menus are unavailable while recording or playback is paused.

You are likely to still have some residual garlic in your potatoes due to the MP3 compression damaging the audio. If you use WAV format, the removal could be near perfect.

See if you can record with "Windows Sound Recorder". That will give us a good starting place.

It is not generally recommended to do "other work" on the computer while using resource intensive software such as Audacity, but if you are confident that your hardware can cope, why not work on a different desktop to the one that Audacity is running on?

Have a look in the "Tutorials" (see link at top of page) - there are instructions for each step that you will need.

Check the amount of free disk space, there may not be enough free space to complete the operation.
