how can you stop it and then record the next segment, If you want to continue recording from the end of the existing track, press SHIFT+R if the you messed up, go back to the segment where you stopped and start recording again from there? Press Ctrl+Z to undo, then press SHIFT+R to try again. Alter...

Look at your wrist watch and count the beats. This method is more accurate than any beat counting software.

I have done that sort of thing using an old 1/4" tape recorder and a large loop of tape.
There are digital effects boxes such as the Boss RC20-XL Loop Sampler available these days to do the same sort of thing.
Audacity does not do this.

c-media and encore sound cards that I have come across have been budget sound cards. I wouldn't expect them to be particularly great quality, but they should work.

It looks like you have something running that is clashing with Audacity, Can you do a fresh boot of your computer and shut down all non-essential processes, then try Audacity.
