Go into Audacity Preferences (Edit > Preferences) and on the Quality tab, change the Default sample format to 16 bit or 32 bit. I suspect that it is on 24 bit and some Macs are known to have problems with 24 bit audio.

Audacity does not support simultaneous recording from multiple sound cards. It does support some multi-channel sound cards but it is rare that anyone ever tells us their success stories so we only hear about the problems. Audacity 1.3.8 uses the "VST bridge" plug-in (as it had no VST support on its own).
Audacity 1.3.9 now has built in VST support and should be used without the VST bridge.
There's an awful lot of VST plug-ins to test, so developing VST support is likely to be ongoing for quite a while.
