Use a sample rate of 44100 (set the default in the "Quality" tab in Preferences)
Export as "WAV (Microsoft) 16 bit PCM"

Audacity will only record from one device at a time. You may be able to record from more than one USB microphone with other programs (note that I say "may" and not "will"). You do not have to record both parts at the same time. You could record one person, then stop, then record ...

As a fix, I just made the recording it with my XP machine and Audacity. I hated having to go back to XP, but I really needed to get it done. I know what you mean. For recording, Microsoft did well with XP - very usable. Ubuntu can be something of a pain to get going, but works very well in the end....

"MP3Split" http://mp3splt.sourceforge.net/mp3splt_page/home.php can handle MP3 files up to the limit that your operating system can handle (probably 2 or 4 GB on an XP machine). Note that it only works with MP3 files. Recently we had a user that swore his file was an MP3 - it was even call...

You can also make "splits" in the track (Ctrl+I). These will move exactly with the audio, though there is no way of labelling them other than the ordinary labels.
