Change Pitch has not been taken out, at least not in the Audacity code. It is possible that your packaged version has left out some necessary dependencies. Have you got the "Change Tempo" effect?

You don't need to. All tracks are automatically mixed into a single stereo file when you Export (or a mono file if all the tracks are centre panned mono track). Audacity does not "Save" audio files - the "Save" function creates "Audacity Projects". To make an audio file...

Hi Lenny, I understand now.
Are you using a USB turntable? or a normal one connected to the sound card input? or a normal turntable connected to the computer through a USB pre-amp? or something else?
