If you've still got the Audacity project, open it and select part of the track and use "Export Selection" from the File menu. If you've only got the WAV file, then try Importing it back into Audacity and doing the same. You may or may not be lucky - I don't know how Macs react to WAV files...

Audio CDs do not support metadata as such. There is a way too add some track information which is to use "CD text". This is not strictly part of the original audio CD format and it is not supported by some CD writers.

You can shrink them down to about 1 millisecond using the "Truncate Silence" effect.
To remove the silences completely you need to do it manually, but the "Silence Finder" (in the Analyze menu) will help you to quickly locate the silences.

When you add the labels, number the labels:

Personally I would have pressed STOP after the first side and then Exported the file as a WAV. Working on long tracks can use an enormous amount of disk space. 1 hour recorded at 32 bit stereo will use about 1.5GB, and this will rapidly increase as you process the recording, so you will quickly have...
