Thanks for the feedback Irish, I suspect that it is just something a bit weird on my system that makes it slow but it would be nice to get a few more reports from other people just to be sure.

I'd suggest checking your hard drive.
1st, check that you have plenty of free space.
2nd check that the drive isn't fragmented.
3rd Check the disk for errors.
Depending on the size of the drive, this may take quite a long time, but you can leave it running while you are doing something else.

I'm not on my Vista machine at the moment, but if I recall correctly there is a setting somewhere in "Windows Control Panel > Sounds and Audio Devices" where you can set recording in mono or stereo.
