To make an audio CD you should export WAV files not MP3s. See here: http://wiki.audacityteam.org/index.php? ... o_burn_CDs
Ubuntu uses Brasero as the default CD burning software - select "Audio Project" when using Brasero.

If you are playing vinyl very loudly it can make the record vibrate and cause feedback.

I presume that this is a mono microphone and that is why you are only getting a single (mono) channel. You can get rewritable CDs. They are called "CD-RW". CD-RW are not always supported by CD players even if the player can play CD-Rs. The manual/specification on CD and DVD players will usually say what types of disks are supported - otherwise it's a case of trying one and see if it works. ...
