The main sound quality loss is if you convert it to MP3.
WAV recordings from vinyl can be very good, providing that the equipment is good and the vinyl is in good condition.

A couple of things to note:
1) For this to work, the label track must not be at the top.
2) Audacity 1.3 can open projects created by Audacity 1.2, but a project that has been saved from 1.3 cannot be opened in 1.2

If you use Ctrl+A to select all, then change the speed or tempo, the labels should move with the audio. I've just tested this on Audacity 1.3.11 and it's working here.
