Using lots of little chunks of uncompressed audio data is a core feature of Audacity's "audio engine". Changing that would be a complete rewrite of Audacity, and then it wouldn't be Audacity, it would be something else.

You are probably going to have to put up with sub-optimum live sound, or sub-optimum recording until you get your speakers fixed.

Tested this on Linux with Audacity 1.3.11
Interrupting Timer Record with the Cancel button shows a message "Nothing to undo" and the recording is still present on the track.

You have posted in the Audacity 1.2 / Windows part of the forum, but Audacity 1.2 does not support Metadata editing.
You can change the metadata in Windows after the file is Exported by right clicking on the file and selecting properties > go to where the id3 tags are displayed and change them.
