If you are just recording from one microphone, use mono. I'd recommend that you give Audacity 1.3.11 a go, it has lots of improvements and in many ways is easier to use. You may have trouble finding a suitable pre-amp/USB sound card to fit that microphone. Most sound cards have mono inputs for the microphone socket.

Your method sounds about right, so now it's just a matter of tweaking them for best results. There are not really any "optimum" settings beyond what you are doing - from there on it depends on the individual sound clip.

Audacity can not, on it's own, record both sides of a Skype conversation. On a Windows computer, to record sounds playing on the computer AND the microphone requires that Audacity is set up to record from "Stereo Mix". The trouble is that Skype changes the settings to "Microphone"...
