I can reproduce the problem on Antix. I'm now looking to see if this is a general problem for 32-bit Linux, or if it is specific to Antix. As Audacity no longer officially supports Windows 7, the easiest solution, until you upgrade your computer, may be to use an older version of Audacity. See: https://www.audacityteam.org/download/legacy-windows/

In theory I should be able to do Shift-R and record a new track using my guitar as many times I as want to right? Yes, up to the point where your hardware can't keep up. On a modern machine that should be a lot of tracks. Have you tried my suggestion about 48000 Hz project rate? The outcome of that...

Did you obtain Audacity via the Audacity website: https://www.audacityteam.org/download/windows/
Did you use the "Audacity 2.4.2 installer" or the "Audacity 2.4.2 zip file"?

I think you will need to supply an actual audio sample for us to be able to help you further.
A 10 second audio sample containing a typical bleep will be sufficient.
